Seared Pork Tenderloin

Pork tenderloin is a very versatile, tasty meat, you can grill it, roast it, smoke it and it takes to seasoning very well.  It makes a fast and simple meal.  I like to roll it in seasoning.  All of our spice blends work well with pork.

Directions:

I like to leave the tenderloin whole if I’m going to barbeque it but if I’m cooking indoors, I cut it in half.  Put a bit of spice on a small plate and roll the meat in it and let it sit for a while.  Heat up a skillet with a bit of olive oil, I prefer to use a cast iron with no oil, sear the meat on all sides and then put the pan, with the meat in it, in the oven.  Depending on how well you seared the meat it should only take about 15 minutes in a 350 degree oven.  Let the meat stand for 5 – 10 minutes and slice it thinly.

You can serve it with, heated tortillas, tzatziki and a salad or potatoes and veg.  It makes a healthy and quick meal.  Try our barbequed potatoes with leeks and a Greek salad for dinner.
